I love Autumn, it's my absolute favourite season. I am very much a cosy homebody, who loves nature - Autumn brings all those things! I also love the little things that make your home feel different as the seasons change.

As Autumn arrives - Apples, cinnamon, cloves and orange make a home feel cosy, and an Autumn Equinox simmer pot is such a lovely way to bring some of that seasonal feeling indoors. A simmer pot is basically a saucepan filled with water, fruit, herbs and spices, very gently simmered on the hob. The warmth releases all those delicious autumn scents and fills your house with them.

But for the Autumn Equinox, I like to make mine a little more intentional. While the simmer pot fills the house with the smell of autumn, it can also be a little seasonal ritual for welcoming the darker half of the year. Nothing complicated. Just things you probably already have in the kitchen, a saucepan and a little bit of autumn magic.

 

You Will Need;

You can use whatever combination you have, but these are my favourite ingredients for an Autumn Equinox simmer pot.

* Apples slices for love and luck

* Orange slices/orange peel for joy and prosperity

* Rosemary for protection

* Cinnamon for abundance

* Cloves for removing negativity

 

How to make the simmer pot

A simmer pot is more about using things you already have, or have foraged. It's not about spending lots of money. You don't have to measure everything exactly. Simmer pots are very forgiving, so use what you have. You could also add a few slices of lemon, bay leaves, star anise or any other autumnal ingredients you fancy. Add all the ingredients to a saucepan and cover it with water. Bring it gently to the boil. Once it's bubbling, turn the heat right down and let it gently simmer. That's it. Keep an eye on the water and top it up whenever necessary. You don't want the pan to boil dry.

 

How long can you simmer it for?

You can keep your simmer pot gently bubbling away for several hours, as long as you keep checking the water level and topping it up. If you want to use it again later in the day, allow it to cool and cover it before storing it in the fridge. I wouldn't keep the same mixture for days on end, though. Fresh is best, and it's so easy to make another one. Never leave a simmer pot unattended!

Don't throw away the leftover liquid

Once you're finished with your simmer pot, you can strain the liquid and give it another use rather than pouring it straight down the sink. Let it cool completely, then pour it into a clean spray bottle and use it as a simple homemade autumn room spray. Give the bottle a little shake before using and spritz it around the room whenever you want another little burst of that gorgeous apple, orange and spice scent. I wouldn't keep it indefinitely, though. Because it's made with fresh fruit and herbs and contains no preservative, keep it in the fridge between uses and use it within a few days.
